1 lb. Chicken thighs

2 tbsp. neutral oil

16 oz butter (8 oz should be very cold (So stick it in the freezer when starting) for biscuits )

1 small white onion (about a half cup)

1 medium carrot (about a quarter cup)

4 medium stalks of celery (about a third cup)

2 tbsp. paprika

1 tsp. garlic powder

Salt to taste

Pepper to taste

6 oz chicken stock

22.0z can of cream of chicken

2 cups flour

2 tbsp baking powder

1 tbsp sugar

1 tbsp salt

3/4 cup heavy whipping cream

Adobo seasoning to taste, or alternative seasoning for chicken

Cooking Instructions

Chicken and soup

Preheat oven to 375 Fareinheit.

Cover baking sheet with foil, drizzle some of the neutral oil to help the chicken not stick (I use grapeseed)

Season the chicken with the Adobo or alternative seasoning to your taste. Drizzle a little more oil on top

Cook the chicken for 20 minutes.

Cut the carrot into halved medalions. Chop the celery into medalion sized pieces as well, and dice the onion.

In a dutch oven or cooking pot, start to saute the veggies in a bout 4 onces of butter over medium low heat. Stir occassionally.

The veggies will take about the same amount of time to get tender as the chicken takes to cook in the oven.

Add the cream of chicken soup (I use Campbell’s and it says to add a can of water as well.) to the cooked veggies, and add the chicken stock.

Once the chicken has cooled enough to handle, go ahead and chop it up into cube sized pieces (about an 1" or so, doesn’t have to be exact.) alternatively shred it. Then add to the pot.

At this point you can add another 4 oz. of butter to the soup (Feel free to omit if you need, it’ll be a bit less savory and thick.)

Add in the paprika, garlic powder, salt and pepper to taste. Lower the heat to a simmer, and let go as long as you’d like.

Dumplings

In a bowl mix together the flour, baking powder, sugar, and 1 tbsp of salt.

Cut the cold butter into small chunks, or grate it into the dry mix.

Add the heavy whipping cream to the butter and dry mix.

Knead this by hand by folding and squeezing together. You don’t want to over work this since it’s essentially biscuit dough. Just enough to combine well. Folding works really well. You can make the biscuit dough ahead and store in the fridge until about 45 minutes before you’re looking to serve.

Raise the temperature of the soup, and start to break of the dough into about 1" balls and drop in.

The dough balls will take somewhere between 20 and 45 mintues to cook in the soup. Once they have good color, and don’t feel doughy on the inside the chicken and dumplings are ready to serve.

6 eggs

1/3 cup of mayonaise

1 tbsp. dijon mustard

1 tsp. / to taste of salt

1 tsp. pepper

Paprika to garnish

Optional

Dill weed garnish

Cooking Instructions

Boil the eggs (If you’re like me and traditionally struggle with peeling, I find hard boiling the water as in heat on high continous high bubbles for the entire ten minutes) for ten minutes and then peel (Immediately after pulling from the boiling water I place into a large bowl with ice water.)

Cut lengthwise in half, and remove the yolks. (I usually use a small round measuring spoon to help get in and remove the yolks)

Combine the mayonaise, mustard, salt, pepper, and egg yolk. Mix well until a smoothe consistancy. I typically do this by hand with a whisk, but you can use a mixer or food processor.

Place the mixture into a small resealable bag or piping bag. If using a resealable bag, cut the corner to act as a piping bag.

Squeeze out the mixture into the egg whites. Get as fancy as you want with this step.

Garnish with paprika and anything else you want.

Keep cool until ready to serve.

2 medium eggplant

1 cup bread crumbs

3 tbsp. smoked paprika

1 tbsp. italian seasonings

8 oz / 1 stick of butter

1/3 cup shredded cheese (Parmesean or mozzerella)

Salt to cure eggplant slices

Optional

Half recipe for a smaller appetizer.

Cooking Instructions

I choose not to peel the eggplant, put if you don’t like the skin, you may. Slice eggplant into quarter inch thick slices and place on a raised cooling rack. I usually place parchment paper under to catch salt / water.

Generously cover eggplant with salt. You’re not trying to place a thick layer, just a decent sprinkling over each. Allow to sit for 20 minutes.

After 20 minutes are up, using a rag / paper towel absorb the water that has wicked from the eggplant. (This helps it crisp and avoid being soggy while baking.)

Melt butter in a bowl. In a separate bowl, mix together bread crumbs, paprika, cheese, and seasonings. While butteris melting, preheat oven to 400 degrees F.

Dredge eggplant slices completely in butter, then bread crumb mixture, place on lined cooking sheet. Top with additional cheese if desired.

Cook for 15 minutes at 400 F / until slightly browned and crispy.

Remove from heat, allow to cool before enjoying!

1/2 cup heavy whipping cream

1/2 cup milk

1 cup parmesan cheese

8 oz farfalle pasta

Optional Ingredients

Alternative to whipping cream and milk, 1 cup half & half

1 lb protien

Cooking Instructions

Slice onions thinly (aiming for rings that can be rendered down)

Heat 1 tablespoon of olive oild on medium-high heat in a skillet. Add sliced onions. Cook for 10 minutes stirring frequently so they do not burn.

As onions start to brown after the first 10 minutes, reduce to medium heat, and cook for an additional 10 minutes. Still stirring frequently. After reducing heat, add salt to taste (about 1 tbsp.)

(Now at 20 minute mark) Reduce heat further to medium/low. Stir occasionaly for 10 more minutes. At the end of this they should be carmelized and have cooked for 30 minutes total.

Begin to boil water for pasta, and add pasta as the water boils. Cook according to packaging (Farfalle tends to be 8-14 minutes)

Remove skillet from heat, sprinkle onions with balsamic vinegar to deglaze pan. Use spatula to scrape the bottom of the pan to deglaze with vinegar. Remove onions from pan and set aside.

Heat 1 tbsp. olive oil in same skillet as onions were cooked in. Add mushrooms, sprinkle with salt.

Cook mushrooms for about 5 minutes, stirring occassionally until mushrooms are soft.

Add fresh spinach to skillet and stir on low or until spinach starts to wilt.

Add half-and-half mixture to the mushroom and spinach mixture. Raise heat to bring to a quick boil.

Immediately after it begins to boil, reduce to a simmer.(If using elextric stove top, you may have to remove from heat for a moment.)

Add shredded parmesan cheeseand salt to taste. Keep stirring while the sauce simmers and until cheese melts

Add carmelized ions back to the skillet with the pasta sauce (Sauce, mushrooms, spinach, now adding onions)

At this point, pasta should be done, remove and drain the pasta. If the sauce is too thick, add a little of the pasta water to the sauce. Immediately add pasta into sauce, serve.

2 lb. cod or other white fish

1 cup lager style beer

2 tsp baking soda

1 tbsp. salt

1 tbsp. paprika

1/2 tbsp. pepper

1 tbsp. hot sauce

1.5 cup flour

1/4 cup sugar

2 eggs

Frying high smoke temperature oil (peanut, canola, sunflower, etc.) for frying

Optional

Other seasonings for batter (I like 1 tbsp. Slap Ya Momma Spicy)

Malt vinegar

Tartar sauce

Lemon juice

Cooking Instructions

Mix 1 cup of the flour, and all of the baking soda, salt, paprika, pepper, hot sauce, flour, sugar, eggs, beer, and any other seasonings in a bowl. Mix until a smooth but easily dripping consistency.

Set the remaining half cup of flour to the side.

Heat up oil to a temperature of 375 F.

Cut your fish into fillet strips. Dry it off well with paper towel.

Coat in flour lightly (enough to have a thin layer, not a full batter)

Dredge the fish in the batter (it’s okay if there are spots that aren’t covered, it’s going to get fluffy and flaky)

Place the fish into the oil. Cook until it reaches about 165 F. internally. (about four minutes. It should be golden brown on the outside as well.)

Remove and pat dry, serve with a squeeze of lemon juice, vinegar, and tartar sauce.

4-8 tbsp. Butter

8 cups fruit of choice (About 5 lbs.)

2 cups flour

1.75 cup milk

2 tsp. vanilla

3 tsp. baking powder

Optional

Ice cream for topping

1 tsp. Cinnamon if using apple or similiar fruit that makes sense. And additional for topping.

Some lemon juice to help stop oxidization of the fruit if needed (apple)

Cooking Instructions

Put the butter in a baking pan (9"x13") and place it in the oven while it preheats to 325 F.

Mix fruit, brown sugar, and optional cinnamon. If needed, lemon.

Mix flour, sugar, baking powder, milk, vanilla, and stir until smooth.

Once oven is heated, remove pan. Pour the mixed batter directly onto the butter/bottom of the pan.

Dump in your fruit filling directly onto the batter, no need to mix together. You can now add some additional cinammon to your preference over top.

Bake 40-50 minutes. OR until the edges are slightly browned and filling is bubbling.

Allow to cool slightly, then cut and scoop to serve. Top with optional ice cream.

1 cup warm water

1.5 tsp. yeast

2.5 cups flour

2 tsp sugar

1.25 tsp salt

Olive oil for brushing onto the crust.

Optional

Parmesean for the crust

Seasoning to spread

Cooking Instructions

mix water and yeast, let sit 5 minutes

whisk flour, sugar, and salt

add water and yeast mixture to the dry mix, and knead until smoothe

shape into ball, and allow to rise in an oiled bowl for 1-2 hours.

As your dough is about done rising, Preheat oven to 500 F, and if you have a convection oven, set it to convection cook. Recommended to use a pizza stone, and place it in the oven to start preheating.

Separate your dough into two pieces for medium/large pies, or four for smaller ones.

Place onto a lightly dusted plate/sheet pan and cover and rest for 30 minutes.

After 30 minutes, Punch a hole into the center of the dough ball (not all the way through), and start to stretch and pull acroos your knuckles, or whatever method works for you to start stretching into the appropriate shape. If you want thicker crust, allow the edge to be a bit thicker (maybe twice as thick as the middle)

Once your pizza dough is shaped, top with your desired toppings, and place in the oven for about 5-6 minutes for a slightly doughy crust. Another minute or two (7-8) for crispier. Keep an eye on the cooking so you can adjust as needed.
